It’s catering to local culture and flavors. As an American, I think the courses lack serious texture and diversity in flavor. There were a few outstanding courses but I had foie gras in 4 of my courses which is shocking for a place in the origins of gastronomy where there are so many techniques and textures to explore. In that sense, I was extremely disappointed. All the “desserts” lacked sugar. They offered to give me something else but I was stuffed so I said no. But nothing we ate was so amazing that I would come back.

Another Michelin starred restaurant checked off my list! The decor is very minimalistic and modern, which I loved. Very clean, intentional, and extremely aesthetically pleasing. The space even smells like a luxe hotel lobby. The soft grey color palette is beautiful, and when you walk in, you’re greeted by the kitchen team and servers, which sets the tone right away. Enigma literally means “puzzle” in Spanish, and the concept really leans into that. I opted out of seeing the menu, so I had to guess the dishes/ingredients as they came out. Honestly, it made the experience more fun and interactive! Our server was warm, attentive, and explained everything effortlessly. Menu highlights: - The Parmesan cheese air waffle was light, crispy, and addictive. - The smoked eel was layered, incredibly tender, and very umami. One of my favorites of the night! - The foie gras flan completely blew my mind and was hands down my favorite dish. Just WOW! You don’t understand until you try it! A lot of the menu plays with textures and flavor contrasts. It’s a very INTERESTING concept with real depth. While a few dishes felt slightly underwhelming, the overall execution was top tier and the experience was memorable.

Tricks get old. Truly delicious food is timeless. Visually some very very beautiful dishes no doubt. However, went in with high expectations given Albert Adrià’s legacy, and while Enigma delivered a technically solid meal, it didn’t quite land emotionally. There’s no denying the precision and craft, but much of the experience leans heavily on the El Bulli-era language of cooking — clever, intricate, and I think it’s starting to feel dated. What stood out more, though, is that when it comes down to pure deliciousness, the meal felt inconsistent. For a restaurant at this level, that should be table stakes. Out of roughly 30 dishes, only a handful — the artichoke, the white asparagus, and a few others — were truly memorable in that sense. I’ve noticed similar things w Gaggan, molecular stuff never, absolutely never tastes as good as fresh stuff w fresh ingredients of the highest quality. The snacks at the beginning of the meal were a complete wash, very ordinary (for a Michelin 2* level). Desserts were particularly disappointing, which is surprising given that Albert Adrià’s roots are in pastry. Overall, a good meal with moments of clarity, but not as compelling or relevant as I’d hoped. This makes me respect Californian chefs and American chefs in general much more. They work w incredible ingredients. Less tricks, delicious food. Service and staff were truly wonderful. Ahh also: their music was straight up off. They were playing random steely dan songs. I don’t understand how a restaurant at this level doesn’t have a perfected playlist of music that perfectly goes w the vibe and decor. Huge huge miss on this.

This place was a surprise, and the creativity is appreciated. Nevertheless, the sheer amount of small dishes was kind of an overkill and increased the chances that they are not all great. Some were spectacular, some others good, and one very disappointing (sea urchin). Overall, I recommended the experience, but they still have a journey ahead.

A generally standout experience with some caveats, we certainly enjoyed our meal. Some truly memorable dishes, great effort by all the staff. We all truly admired what they have accomplished. That being said, reflecting at the end of our two week Spanish holiday I struggle justifying 920€ for 3 people - it was not “that” much more memorable compared to numerous other stellar Michelin (and non Michelin) “non star” restaurants we enjoyed this same holiday for a small fraction of the price. Furthermore, one of our party had visited previously and felt this evening was not nearly as immersive as his previous visit where they were taken on a tour around the facility for different courses. He was clearly disappointed - not at all the experience he’d had the first time that had him yearning to return. Which ultimately we will not.
